Another year has went by in a flash. 2018 is almost up and that means Christmas and the holiday season is right around the corner, in a fortnight to be exact.
Soon enough families across Ireland will be sitting around the Christmas tree, exchanging cards and presents, gorging on chocolate and desserts alike.
We have dug up some delicious desserts from all corners of the web to give you a nice Christmas send off.
For all the coffee lovers out there, here are a few ideas for desserts you can make over the holiday season to enthral and excite those dear to you.
1 . Mocha-Chocolate Trifle
The mocha-chocolate trifle is for anyone who loves chocolate and coffee combined. What’s more it’s low in calories so all that eating over Christmas doesn’t pack on so many pounds.
What you’ll need:
- 1 (18.25-ounce) package light devil’s food cake mix
- 1 1/3 cups water
- 2 tablespoons vegetable oil
- 2 large egg whites
- 1 large egg
- Cooking spray
- 3 cups cold fat-free milk
- 1 (5.9-ounce) package chocolate instant pudding mix
- 1/2 cup Kahlúa (coffee-flavored liqueur) or 1/2 cup strong brewed coffee
- 1 (8-ounce) carton frozen fat-free whipped topping, thawed
- 1/2 cup chopped reduced-fat chocolate toffee crisp bars (about 4 bars)
2 . Chocolate-coffee Gingerbread Cake
Adding a new twist to the gingerbread man is the Chocolate-coffee Gingerbread Cake.
What you’ll need:
- 2 cups flour
- 2 tsp. baking soda
- 1 tsp. coarse kosher salt
- 1 tsp ground cinnamon
- 1 tsp. ground cloves
- 1 tsp. ground ginger
- 1 cup sugar
- 1 cup Crosby’s Fancy Molasses
- 1 cup olive oil or canola oil
- 3 large eggs
- 1 cup freshly brewed coffee (strong and hot)
- 1 cup chopped bittersweet chocolate (5 to 6 ounces)
- 1/4 cup chopped crystallized ginger (optional)
Coffee whipped cream:
- 1 cup chilled whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon instant coffee
3 . Coffee S’mores Pie
If you like chocolate with heavy cream, crust made with Nutella and meringue added into the mix then the Coffee S’mores Pie may be the dessert for you this holiday season.
What you’ll need:
For Graham Cracker Crust
- 9 whole graham crackers, ground finely in a food processor
- 2 tablespoons heavy cream
- 2 tablespoons Nutella
- 1 ounce semisweet or bittersweet chocolate, melted
- 1 tablespoon unsalted butter, melted
For Coffee Ganache
- 12 ounces semisweet or bittersweet chocolate (do not exceed 61% cacao), finely chopped
- 2 tablespoons (1/4 stick) unsalted butter, cup into ½’ cubes
- 1 ¼ cups heavy cream
- 2 tablespoons finely ground coffee beans
And For The Meringue
- 2 large egg whites
- ½ cup sugar
4 . Tiramisu Panna Cotta
For a dessert which is very quick and simple to make and requires little to no cooking skills, the Tiramisu Panna Cotta adds kahlua and espresso powder to give you a kick.
What you’ll need:
- 1 cup of milk
- 1 envelope of unflavored gelatin
- 1 1/2 cup heavy cream
- 1/4 cup mascarpone
- 1/3 cup sugar
- 3 Tbsp Kahlua
- 2 Tbsp instant espresso powder
- cocoa powder for dusting
5 . Caramel Apple Coffee Cake
A dessert that doesn’t disappoint, once you make a Caramel Apple Coffee Cake you’ll make it again and again for the sheer flavour and taste.
What you’ll need:
- 12 tbsp. butter, softened and divided, plus more for greasing pan
- 1/2 c. granulated sugar
- 1 large egg
- 1 tsp. pure vanilla extract
- 1/2 c. sour cream
- 1 1/2 c. all-purpose flour, divided
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. kosher salt
- 1/2 c. packed light brown sugar
- 1 c. peeled, cored and chopped apples (about 1/2″ pieces)
- 1/3 c. caramel, warmed
